Caribbean Culinary Research

Research and development is at the core of our values. With the chef’s science background, the kitchen some times looks more like a laboratory than a kitchen. We identify, study, research and categorize Caribbean ingredients. Then different culinary processes are tested on them such as lacto-fermentations, dry fermentations, aging, crystallizations, drying, gelatinizations, foams, powder, smoking just to name a few.

Our gardens - fresh ingredients

Our gardens have been designed to not only provide fresh harvest to the kitchen, but also to bring the customers closer to the source of food. Our goal is to grow ancestral varieties of Caribbean ingredients and to acclimate other plants to the Rincón weather. The plants we grow not only teach customers about ancestral ingredients but also keep alive the hard-to-find varieties of endemic plants such as sweet potatoes, lerenes, yautía, acerolas, nuts and herbs

Rincón - a destination for foodies

Our restaurant is located in the city of Rincón, one of the most unique towns in the world. It sits on the Caribbean Sea and is at the most extreme point on the west coast of Puerto Rico. It is known as the surf capital of the Caribbean. It’s remarkable landscape, internationally know surf spots and marine life brings people from all around the world. We strive to reflect the magic of this city in our food.

 

Meet the founders

JOSIAH HERNANDEZ

Executive Chef

With close to 20 years of experience, chef Josiah is committed to brining culinary experiences that are interdisciplinary in nature pulling science, history, agriculture and art together. He has a Bachelor’s degree in Electrical Engineering from Virginia Tech, A Masters in Agriculture Economics from the University of Puerto Rico and a Master’s in culinary arts and sustainable food systems from the University of Barcelona-Barcelona Culinary Hub. Josiah has collectively traveled and worked in over 20 countries in 5 different continents gaining valuable farm-to-table experiences to bring back to Puerto Rico. His biggest influence growing up was his grandmother that instilled in him a true love for Puerto Rican cuisine and the use of fresh ingredients from the farm.Chef Josiah uses his passion for Caribbean ingredients to connect with customers in a memorable way. He loves to visit table by table after dinner and talk with the customers and get to know them.

DAYHANA TAMAYO

General Manager

Dayhana and wife of Josiah, has over 15 years of experience as an accountant in corporate and small business settings. She is passionate about impacting local communities with faith driven and socially responsible businesses. Originally from Colombia, she completed her bachelor’s degree in accounting at the Universidad Javeriana in Cali Colombia. She has strategically help build a restaurant that curates unique experiences for customers with the highest level of customer service. She is also the president and co-founder of Chef’s Garden’s non-profit Siembra Vida, an organization that shares the love of God and lifts marginalized communities through farm-to-table experiences in Puerto Rico, Colombia and Nicaragua.
